How can I convince her otherwise?

I don't think you should try to "convince her" of anything. I think you should have a mature conversation with her about it.
Honestly, why is it such a big deal for you to wear a different swimsuit? Why is it important for you to feel sexy and sensual when you're at the pool or beach, especially if it's making someone you care about uncomfortable?
Not questions you need to answer to me, but probably what you should discuss with your girlfriend.
I don't think people should be dictating what their significant other does or does not wear, but this is obviously making her feel insecure or jealous or whatever and she's had the maturity to voice that. Talk to her about it and decide if making her feel that way is a reasonable trade-off for you feeling more "confident".
The first time I saw my bf years ago in a Speedo I was shocked. I always found them just wrong. He was from Europe. But he looked amazing in them. He truly had a long lean naturally strong body. Are they for everyone no but just like bikini’s certain bodies are sheer perfection in them. Wear what you want. It’s your body.
There's so many possible reasons for her to think that. Including what seems appropriate, what you look like to her when you wear whatever, what style preferences she has and the list goes on. Adults can decide what they like but shouldn't be shocked if others don't find the same look appealing.
I love seeing women in thong type bottoms sometimes. But not always. Body shape, environment, age(this leans more into I don't want them to be/look too young), the fit of the suit, and the wearers comfort level all have a huge impact on whether I want to look at them.
My wife doesn't like the new trend of shorts getting shorter on men that many teens and twenties are wearing. She says it looks awkward to her because it doesn't look masculine.
Style changes and it's very wearer and viewer dependant.

A recent snap of me on Bournemouth beach coming out of the water. I don't see that as revealing at all.
Hey, it’s covering your nipples, right?

Back when I was still pretending to be straight I used to wear the tiniest beach trunks possible, ideally string-sided with a skimpy back. My GF at the time wore a thong for sunbathing and we both enjoyed the exhibitionist aspect. It was only when I bought myself a beach thong that she started to suspect that I was flaunting my ass to other men.
